Zibibbo Sono-Qui 2023

This is probably one of the most extraordinary Zibibbos ever made.

With minimal yields of less than 2 kilograms per vine, this wine achieves the maximum yield reduction and quality increase.

Made entirely by hand without the use of machines or pumps, this wine is almost untreated (minimal use of sulphur) and produced with an extremely rare and unique spontaneous fermentation to create completely natural wines.

Despite the already low yield, the grapes are subjected to another selection, then 100% hand-stemmed, left on the mash for just under a day and then fermented almost unpressed in steel tanks.

The steel tanks are in a separate cold store to keep the fermentation temperatures as low as possible.

A fermentation temperature of 14-16 degrees ensures a long fermentation and the extraordinary aromas that one can imagine in a Zibibbo
